Ingredients:
7-8 LBS Boneless Pork Shoulder
A healthy amount Lenny’s Cajun and All Around Rub
2 Cups Apple Juice
5 Cups Cole Slaw (Your Favorite)
16 Oz Dill Pickle Chips
BBQ Sauce (See Recipe)
Fresh Bakery Rolls
Preparation:
Rub trimmed pork shoulder with rub (liberally). Prep BBQ or Smoker. Smoke @ 200°-250° (use water pan) for 8-10 hours spraying with apple juice. Pork should have a dark outside crust and fall apart when pulled apart with a fork. Place coleslaw and pickles on roll, add about 4 oz of pork and BBQ sauce on top. Snarf it down.
